Dried Figs Stuffed with Arugula and Walnut Pate

Dried Figs Stuffed with Arugula and Walnut Pate Prep time: 20 mins Serves: 5-10

Ingredients

  • 10 - dried figs
  • 1/8 TSP - salt
  • 1 TBSP - fresh lemon juice
  • 3 cups - loosely packed arugula
  • 1/3 cup - walnuts, soaked for 4 hours
  • 1 TSP - olive oil

Instructions

  1. 1 For the pate, combine walnuts, arugula, lemon juice, salt and olive oil in a food processor or blender and carefully pulse until it becomes a crumbly texture.
  2. 2 Chop off the stem and open the fig up with your fingers. Fill the figs with the pate.
