Mango, Blackberry Feta Bites

Ingredients

  • 1 cup - balsamic vinegar
  • 12 - large blackberries
  • 1 - mango, diced into bite-sized pieces
  • 1 - (7 ounce) package feta, cubed

Instructions

  1. 1 To prepare the balsamic reduction, in a small saucepan over medium-high heat, bring balsamic vinegar to a simmer. Reduce heat to medium-low, and simmer until the vinegar has reduced to 1/4 cup, about 20 minutes. Set aside and let cool. Arrange blackberry, mango and feta on skewers. Drizzle with balsamic reduction and serve.

Tips:
The fresh, juicy flavor of the berries and mango combines with the salty flavor of the feta to create a refreshing summer treat.
