Ingredients
- 3 cups - cooked chickpeas
- 1/2 cups - red onion, minced
- 1 - small clove garlic, minced
- 1 cup - finely chopped cilantro
- 1 cup - chopped tomatoes, deseeded
- 1 cup - chopped cucumber
- 1 cup - pomegranate arils (seeds)
- 1/4 cup - extra-virgin olive oil
- 2.5 TBSP - apple cider vinegar
- 1 - lemon, juiced
- 1 TBSP - pure maple syrup
- 1/4 TSP - ground cinnamon
- 1 TSP - ground cumin
- Dash of cayenne pepper
- Pinch of salt
