Ingredients

  • 3 cups - cooked chickpeas
  • 1/2 cups - red onion, minced
  • 1 - small clove garlic, minced
  • 1 cup - finely chopped cilantro
  • 1 cup - chopped tomatoes, deseeded
  • 1 cup - chopped cucumber
  • 1 cup - pomegranate arils (seeds)
  • 1/4 cup - extra-virgin olive oil
  • 2.5 TBSP - apple cider vinegar
  • 1 - lemon, juiced
  • 1 TBSP - pure maple syrup
  • 1/4 TSP - ground cinnamon
  • 1 TSP - ground cumin
  • Dash of cayenne pepper
  • Pinch of salt
