Dried Figs Stuffed with Arugula and Walnut Pate

Ingredients
- 10 - dried figs
- 1/8 TSP - salt
- 1 TBSP - fresh lemon juice
- 3 cups - loosely packed arugula
- 1/3 cup - walnuts, soaked for 4 hours
- 1 TSP - olive oil
Instructions
- 1 For the pate, combine walnuts, arugula, lemon juice, salt and olive oil in a food processor or blender and carefully pulse until it becomes a crumbly texture.
- 2 Chop off the stem and open the fig up with your fingers. Fill the figs with the pate.
