This farro salad is great for any summer picnic. It’s so satisfying and delicious, and if you’ve never had farro, it’s a type of ancient grain that is super healthy, with a bit of a nutty flavour and slightly chewy texture.

Farro Tuna Salad

Farro Tuna Salad Serves: 4-6

Ingredients

  • 3 cups uncooked farro, rinsed and drained
  • 1 cup olives, pitted
  • 1 cup sundried tomatoes, chopped
  • 10 basil leaves, chopped
  • 3 x 80g tins, Italian tuna
  • 1 tbsp salt
  • 1/2 cup extra-virgin olive oil
  • 2 tbsp balsamic vinegar

Instructions

  1. 1 In a pot of boiling water, add farro and cook for about 25-30 minutes or until al dente. Remove from heat and drain. Let the farro cool for at least 15 minutes.
  2. 2 Transfer the farro to a large bowl and add in remaining ingredients. Toss until combined. Serve and enjoy!
