This farro salad is great for any summer picnic. It’s so satisfying and delicious, and if you’ve never had farro, it’s a type of ancient grain that is super healthy, with a bit of a nutty flavour and slightly chewy texture.
Farro Tuna Salad

Ingredients
- 3 cups uncooked farro, rinsed and drained
- 1 cup olives, pitted
- 1 cup sundried tomatoes, chopped
- 10 basil leaves, chopped
- 3 x 80g tins, Italian tuna
- 1 tbsp salt
- 1/2 cup extra-virgin olive oil
- 2 tbsp balsamic vinegar
Instructions
- 1 In a pot of boiling water, add farro and cook for about 25-30 minutes or until al dente. Remove from heat and drain. Let the farro cool for at least 15 minutes.
- 2 Transfer the farro to a large bowl and add in remaining ingredients. Toss until combined. Serve and enjoy!
