Mango Cashew Salad

Mango Cashew Salad Prep time: 10 mins Serves: 4

Ingredients

  • 2 - mangos, peeled and diced
  • 1/2 - red onion, thinly sliced
  • 1/4 cup - red bell peppers, thinly sliced
  • 16 - cashews
  • 1/2 cup - cilantro, finely chopped
  • 2 TBSP - freshly squeezed lime juice
  • 1/8 TSP - red pepper flakes

Instructions

  1. 1 In a large bowl, toss mango, red onions, bell peppers, cashews and cilantro
  2. 2 Add limejuice and red pepper flakes, toss to coat. Serve cold.
