Red Pepper Hummus

Ingredients
- 3 Red Bell Pepper (quartered)
- 5 Garlic (cloves, skin left on)
- 1/16 Avocado Oil Spray
- Sea Salt & Black Pepper (to taste)
- 2 cups Chickpeas (drained, rinsed)
- 3 tbsp Lemon Juice
- 1 tsp Smoked Paprika
Instructions
- 1 Preheat the oven to 400°F (205°C). Place the red bell pepper and garlic on a baking sheet and spray with the avocado oil. Season with salt and pepper to taste.
- 2 Bake in the oven for 30 minutes
- 3 Remove the garlic cloves from their peel. Add them along with the roasted red peppers, chickpeas, lemon juice, and smoked paprika to the bowl of a food processor. Process until smooth and creamy.
- 4 Season to taste.
