This pumpkin loaf is a cozy, spiced twist on the classic fall treat. Moist and tender, it’s made with pumpkin, warming spices, and a touch of brown sugar, then finished with a light cream cheese icing that adds the perfect sweet touch.

Pumpkin is rich in beta-carotene, fibre, and essential vitamins and minerals that help support memory, focus, and overall brain health. Its antioxidants also protect the heart, skin, and eyes.

Pumpkin Loaf with Cream Cheese Icing

Ingredients

  • ½ cup vegetable oil
  • 1 ¼ cups packed brown sugar
  • 2 eggs
  • 1 ¼ cup canned pure pumpkin puree
  • 3 tsp pumpkin spice or 1 tsp cinnamon, 1 tsp ginger, 1/4 tsp ground allspice, ¼ tsp ground nutmeg
  • Salt dash
  • 1 ½ cups all purpose flour
  • 2 tsp baking powder
  • ICING:
  • 3 oz light cream cheese
  • 2/3 cup icing sugar

Instructions

  1. 1 Preheat oven to 350 F, add oil, brown sugar, eggs into bowl and mix well.
  2. 2 Add pumpkin, spices, flour and baking powder and mix until well combined.
  3. 3 Pour into 9” x 5” loaf pan sprayed with vegetable oil. Bake for 35 – 45 minutes or just until tester comes out clean. Cool.
  4. 4 Icing: in small food processor or with hand mixer, beat cream cheese and icing sugar, pour over cooled cake. Enjoy!!
