SUPERFOOD // PUMPKIN:
This pumpkin loaf is a cozy, spiced twist on the classic fall treat. Moist and tender, it’s made with pumpkin, warming spices, and a touch of brown sugar, then finished with a light cream cheese icing that adds the perfect sweet touch.
Pumpkin is rich in beta-carotene, fibre, and essential vitamins and minerals that help support memory, focus, and overall brain health. Its antioxidants also protect the heart, skin, and eyes.

Pumpkin Loaf with Cream Cheese Icing
 
												
								
				
								
							Ingredients
- ½ cup vegetable oil
- 1 ¼ cups packed brown sugar
- 2 eggs
- 1 ¼ cup canned pure pumpkin puree
- 3 tsp pumpkin spice or 1 tsp cinnamon, 1 tsp ginger, 1/4 tsp ground allspice, ¼ tsp ground nutmeg
- Salt dash
- 1 ½ cups all purpose flour
- 2 tsp baking powder
- ICING:
- 3 oz light cream cheese
- 2/3 cup icing sugar
Instructions
- 1 Preheat oven to 350 F, add oil, brown sugar, eggs into bowl and mix well.
- 2 Add pumpkin, spices, flour and baking powder and mix until well combined.
- 3 Pour into 9” x 5” loaf pan sprayed with vegetable oil. Bake for 35 – 45 minutes or just until tester comes out clean. Cool.
- 4 Icing: in small food processor or with hand mixer, beat cream cheese and icing sugar, pour over cooled cake. Enjoy!!
