Cherry Lentil Salad

Cherry Lentil Salad Prep time: 10 mins Cook time: 20 mins Serves: 4-5


  • 1 cup - green lentils
  • 1 cup - cherries, pitted
  • 1 - small red onion, thinly sliced
  • Goat cheese, to taste
  • Handful of basil, chopped into ribbons
  • Red wine vinaigrette
  • 1 1/2 TBSP - red wine vinegar
  • 1 TBSP - dijon mustard
  • 1/4 cup - olive oil
  • 1 TSP - maple syrup
  • Salt & pepper to taste


  1. 1 In a medium size pot add 5 cups of water and bring to a boil. Add lentils, cover, and reduce heat to low, simmer for 20 minutes.Whisk together ingredients for dressing in a small bowl. When lentils are done, drain, and combine with dressing in a large mixing bowl.Add cherries, onions, goat cheese, and basil. Gently toss. Season with more salt and pepper if desired.
