Hummus is an excellent Mediterranean inspired protein. Studies show that a Mediterranean diet may reduce inflammation, oxidative stress, & other vascular risk factors for brain & heart diseases.
- 1 - cucumber
- 1/2 cup - store-bought plain hummus
- 2 - spring onions, finely chopped
- 1 Using a melon baller, scoop cucumber innards and fill with hummus. Alternatively, peel cucumber and slice into 1-inch pieces, then fill with hummus like a sandwich. Top hummus with chopped spring onions and serve.
