Cucumber Hummus Scoops

Cucumber Hummus Scoops Prep time: 5 mins Serves: 6-8

Ingredients

  • 1 - cucumber
  • 1/2 cup - store-bought plain hummus
  • 2 - spring onions, finely chopped

Instructions

  1. 1 Using a melon baller, scoop cucumber innards and fill with hummus. Alternatively, peel cucumber and slice into 1-inch pieces, then fill with hummus like a sandwich. Top hummus with chopped spring onions and serve.

Notes

Tips:
Cucumbers and hummus are delicious together and a fresh appetizer to serve during brunch or dinner.
Make Ahead:
This dish can be left at room temperature for up to 2 hours.
