- 4 - tightly packed cups of young arugula leaves, rinsed and dried
- 1 - small yellow pepper, chopped
- 2 - stalks of celery, thinly sliced
- 1 cup - cherry tomatoes, halved
- 4 - radicchio leaves, chopped
- 2 - shallots, thinly sliced
- Dressing Ingredients:
- 2 TBSP - EVOO
- 2 TBSP - Apple Cider Vinegar
- 2 TBSP - maple syrup
- 1 TSP - finely chopped garlic
- Salt and pepper to taste
