Ingredients

  • Salad Ingredients:
  • 4 - tightly packed cups of young arugula leaves, rinsed and dried
  • 1 - small yellow pepper, chopped
  • 2 - stalks of celery, thinly sliced
  • 1 cup - cherry tomatoes, halved
  • 4 - radicchio leaves, chopped
  • 2 - shallots, thinly sliced
  • Dressing Ingredients:
  • 2 TBSP - EVOO
  • 2 TBSP - Apple Cider Vinegar
  • 2 TBSP - maple syrup
  • 1 TSP - finely chopped garlic
  • Salt and pepper to taste
