Mediterranean Inspired Tuna Crudo

Ingredients
- 1 mini cucumber, thinly sliced
- 1 mini cucumber, sliced into thin ribbons
- 1/2 lb sushi grade tuna
- 3 Tbsp olive oil
- 2 tsp fresh ginger, julienned
- 1 tsp chives, finely chopped
- 1 tsp black salt
- 2 tsp lemon zest
Instructions
- 1 Slice tuna into 1″ thick pieces that are roughly a 2″ x 2″ square. Place on a chilled plate, side by side and rub each piece with a little bit of olive oil. Place cucumber slice on top of tuna. Top with a few slivers of ginger and sprinkle chopped chives on top. Garnish with mini cucumber ribbons, then finish with black salt and freshly microplaned lemon zest.
