Miso in your banana bread may sound odd, but trust Chef Haan Palcu-Chang, it works incredibly well. As a father of a toddler, he is constantly thinking about more healthful dessert options that he can feed his daughter. And this one has certainly been a crowd favourite. For those who want a more sugar-free version, you can reduce the amount of honey in the recipe.

Multigrain Miso Banana Bread
Ingredients
- Wet Ingredients:
- 4 large or 530g overly ripe bananas, mashed
- ½ Cup or 125g olive oil
- 3 Tbsp miso
- 1/2c or 160g honey
- 3 eggs
- 1 Tbsp vanilla
- Dry Ingredients:
- ¼ Cup rye flour or 35g
- ¼ Cup spelt flour or 40g
- ½ Cup wheat bran or 30g
- ½ Cup quick oats or 50g
- ½ Cup oat flour or 70g
- 1 Tsp baking powder
- 1 Tsp baking soda
- 1 Tsp cinnamon
Instructions
- 1 In separate bowls mix the wet and dry ingredients together, then combine.
- 2 Pour batter in a prepared baking tray and bake at 350F for 45-60 minutes or until a cake tester inserted into the centre of the bread comes out clean.
