Miso in your banana bread may sound odd, but trust Chef Haan Palcu-Chang, it works incredibly well. As a father of a toddler, he is constantly thinking about more healthful dessert options that he can feed his daughter. And this one has certainly been a crowd favourite. For those who want a more sugar-free version, you can reduce the amount of honey in the recipe.

Multigrain Miso Banana Bread

Ingredients

  • Wet Ingredients:

  • 4 large or 530g overly ripe bananas, mashed
  • ½ Cup or 125g olive oil
  • 3 Tbsp miso
  • 1/2c or 160g honey
  • 3 eggs
  • 1 Tbsp vanilla
  • Dry Ingredients:
  • ¼ Cup rye flour or 35g
  • ¼ Cup spelt flour or 40g
  • ½ Cup wheat bran or 30g
  • ½ Cup quick oats or 50g
  • ½ Cup oat flour or 70g
  • 1 Tsp baking powder
  • 1 Tsp baking soda
  • 1 Tsp cinnamon

Instructions

  1. 1 In separate bowls mix the wet and dry ingredients together, then combine.
  2. 2 Pour batter in a prepared baking tray and bake at 350F for 45-60 minutes or until a cake tester inserted into the centre of the bread comes out clean.
