Overnight Apple Cinnamon French Toast

Ingredients
- Bottom Layer:
- 1 cup - coconut sugar
- 1/2 cup - organic butter
- 2 TBSP - maple syrup
- 2 - large organic apples (pink lady, macintosh, fuji all work well)
- French Toast Layer:
- 3 - organic eggs
- 1 TSP - pure vanilla extract
- 1 TSP - cinnamon powder
- 1 cup - almond milk
- 1 - medium loaf of whole grain sourdough bread (day old bread works best)
- Apple Sauce Layer:
- 1 cup - apple butter
- 1 cup - unsweetened apple sauce
- 1/2 TSP - cinnamon powder
- 1/8 TSP - nutmeg powder
- 3 - medium sweet potatoes, washed and thinly sliced
- 1 TBSP - olive oil
- 1 - small bunch of fresh thyme (2-3 TBSP with stems removed)
- 16 - whole organic eggs
- 1 cup - almond milk
- 3/4 cup - shredded goat mozzarella
- 1 TSP - sea salt & pepper to taste
- 2 - medium red bell peppers, chopped
- 1 cup - asparagus, chopped
Instructions
- 1 Stage 1 (Prepare the night before baking): Wash and chop apples in to cubes. Over medium-low heat, stir and thicken the coconut sugar, butter and maple syrup for approximately 5 minutes then pour in to a large glass pan and arrange the apples over top. Next, tear the day old bread in to 1’’ x 1’’ or bitesized pieces. Mix the almond milk, eggs, vanilla and cinnamon in to a large bowl, stir and add bread to the french toast mixture. Ensure all of the bread is soaked / covered in the mixture (you may not need the whole loaf depending on the size). Pour egg mixture and bread over the apples, cover and refrigerate overnight.
- 2 Stage 2 (Prepare the morning of baking): Remove the pan from the fridge 30 minutes before placing in the oven. Preheat the oven to 350 degrees and bake uncovered for between 35-45 minutes or until the bread no longer appears soggy. During the last 10 minutes of baking combine the apple sauce, apple butter and spices over low heat (to warm up). Once the french toast is removed from the oven use a spatula to cover with the apple syrup. Serve warm and enjoy!
