Pumpkin Chocolate Chip Loaf

Ingredients
- 2 eggs
- 1 cup packed brown sugar
- 1 cup canned pure pumpkin
- 1/3 cup vegetable oil
- 1/3 cup light sour cream
- 1 tsp vanilla extract
- 1 1/3 cups flour
- ½ cup whole wheat flour
- ½ cup mini chocolate chips
- 2 tsp baking powder
- 1 tsp ground cinnamon
- 1 tsp ground ginger
- ¼ tsp nutmeg
- 1oz semi-sweet chocolate chips + 1 tsp oil (optional garnish)
Instructions
- 1 Mix first 6 ingredients together. Add remaining dry ingredients and mix until just combined. Pour into 8” x 5” loaf pan sprayed with vegetable oil and bake at 350F for about 30 – 40 minutes or until tester comes out dry.
- 2 Melt chocolate with oil for 30 seconds on high. Mix until combined and drizzle over cake.
