Pumpkin Chocolate Chip Loaf

Pumpkin Chocolate Chip Loaf Prep time: 10 mins Cook time: 30 mins Serves: 16

Ingredients

  • 2 eggs
  • 1 cup packed brown sugar
  • 1 cup canned pure pumpkin
  • 1/3 cup vegetable oil
  • 1/3 cup light sour cream
  • 1 tsp vanilla extract
  • 1 1/3 cups flour
  • ½ cup whole wheat flour
  • ½ cup mini chocolate chips
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • ¼ tsp nutmeg
  • 1oz semi-sweet chocolate chips + 1 tsp oil (optional garnish)

Instructions

  1. 1 Mix first 6 ingredients together. Add remaining dry ingredients and mix until just combined. Pour into 8” x 5” loaf pan sprayed with vegetable oil and bake at 350F for about 30 – 40 minutes or until tester comes out dry.
  2. 2 Melt chocolate with oil for 30 seconds on high. Mix until combined and drizzle over cake.
