SUPERFOOD // PUMPKIN:

Pumpkin is a starchy vegetable that is rich in many vitamins and minerals, including the antioxidants alpha-carotene, beta-carotene and beta-cryptoxanthin. Antioxidants may protect yours cells against free radical damage, which can protect your body from the oxidative stress linked to cancer and many chronic illnesses. Beta carotene is also converted into vitamin A, which is needed for eye health, immunity and healthy organ function.
