Zucchini Noodles with Fig, Hemp and Pumpkin Seeds

Zucchini Noodles with Fig, Hemp and Pumpkin Seeds Serves: 2

Ingredients

  • 1 zucchini, peeled and spiraled (Zucchini Noodles)
  • 2 figs, thinly sliced (Zucchini Noodles)
  • 2 tbsp hemp seeds (Zucchini Noodles)
  • 2 tbsp pumpkin seeds (Zucchini Noodles)
  • 1 avocado, pitted (Avocado hemp oil sauce)
  • 1 tbsp hemp oil (Avocado hemp oil sauce)
  • 1 tbsp apple cider vinegar (Avocado hemp oil sauce)
  • 1 clove garlic, minced (Avocado hemp oil sauce)
  • 1/2 tsp paprika (Avocado hemp oil sauce)
  • Couple pinches of pink Himalayan salt (Avocado hemp oil sauce)

Instructions

  1. 1 For the zucchini noodles: Using a spiralizer, spiral zucchini into noodles. Cut the noodles to desired length (this can be done using your hands). Prepare the figs by slicing them into thin pieces.
  2. 2 For the avocado hemp oil sauce: Blend all ingredients in a food processor until smooth.
  3. 3 Plate and serve: In a large bowl, mix the dressing with the zucchini noodles. Top the noodles with fig slices, hemp seeds and pumpkin seeds. Enjoy!
