Apple Cranberry Crisp

Ingredients
- Crisp Topping:
- 1/4 cup - quinoa flakes
- 1/2 cup - whole wheat flour
- 1/2 cup - brown sugar
- 1/2 cup - rolled oats
- 1/4 cup - butter or Earth Balance butter alternative, softened
- Filling:
- 3 - gala apples
- 1 - lemon juice
- 1 - lemon juice
- 1/2 cup - fresh whole cranberries
- 3 TBSP - brown sugar
- 1 TSP - cinnamon
- 1/4 TSP - nutmeg
- 1/2 TSP - vanilla
Instructions
- 1 Preheat oven to 350F.
- 2 In a bowl, combine flour, brown sugar, oats and quinoa flakes. Once the dry ingredients are fully combined, mix in the softened butter, and combine until you have a thick, crumbly mixture. Work with cold hands to prevent the butter from melting too much.
- 3 Peel and chop apples into 1 1/2 inch pieces. In a separate bowl, mix apples and cranberries with lemon juice, cinnamon, nutmeg, brown sugar and vanilla. Mix well. Line a baking dish with the fruit mixture, then top with crumbly dry mixture.
- 4 Bake for 25 minutes, then check to be sure the mixture hasn’t bubbled over the topping. Bake for another 15 to 25 minutes, until the topping is dark brown and crispy and apples are soft.
