Broccoli Steak With Spicy Chickpea Stew And Pistachio Pesto

Broccoli Steak With Spicy Chickpea Stew And Pistachio Pesto Serves: 4

Ingredients

  • BROCCOLI STEAK
  • 2 heads broccoli
  • 4 tbsp olive oil
  • 1 tsp kosher salt
  • Pepper to taste
  • SPICY CHICKPEA STEW
  • 3 tbsp olive oil
  • 1 medium white onion, ¼’ diced
  • 1 medium carrot, ¼” diced
  • 4 cloves garlic, minced
  • 1 tsp coriander powder
  • 1 can, 796 mL diced tomatoes
  • 1 cup vegetable stock
  • 2 cans, 540 mL chickpeas
  • 3 tsp harissa paste
  • Salt and pepper to taste
  • PISTACHIO PESTO
  • 2.5 cups basil
  • 4 cloves garlic
  • 1/3 cup pistachios, toasted
  • 1 tsp kosher salt
  • ½ juice of a lemon
  • ½ cup olive oil
  • Pepper to taste

Instructions

  1. 1 BROCCOLI STEAK
  2. 2 Preheat oven to 425F. Parchment line a sheet pan and set aside.
  3. 3 From the stem end, slice the broccoli in half.
  4. 4 Coat broccoli with olive oil. Season with salt and pepper.
  5. 5 Place broccoli steak cut side down.
  6. 6 Place in oven for 15-20 minutes.
  7. 7 Remove from oven and flip steak over.
  8. 8 Return to oven and roast for another 10-12 minutes.
  9. 9 SPICY CHICKPEA STEW
  10. 10 Heat sauté pan over medium heat.
  11. 11 Add oil, onions, carrots, and garlic. Season with salt and pepper. Sauté until tender, approximately 5-7 minutes.
  12. 12 Stir in coriander until the coriander is toasted, approximately 3-5 minutes.
  13. 13 Add in the tomatoes and vegetable stock. Season with salt and pepper. Bring this to a boil.
  14. 14 Add chick peas and simmer for 10-12 minutes.
  15. 15 Fold in harissa paste.
  16. 16 Keep stew on low until ready to serve.
  17. 17 PISTACHIO PESTO
  18. 18 Place basil, garlic, pistachios, salt and lemon juice in a food processor.
  19. 19 While the machine is running, slowly add olive to blend.
  20. 20 Season to taste.
  21. 21 ASSEMBLE OF DISH
  22. 22 Divide stew between 4 plates. Add a broccoli steak on top. Top with pesto. Enjoy!
