Fall is the perfect time for squash of all kinds. But we are particularly loving the brain and body benefits of Butternut Squash.

Did you know that a cup of cubed butternut squash provides 582 mg of potassium? That’s more than in potassium-rich bananas. Your brain needs potassium, it helps brain cells communicate with each other and has been linked to learning, the release of hormones, and metabolism.

Butternut Squash is also a good source of Vitamin B6, Vitamin C, and Vitamin E; which may protect the brain from age related damage. People who consume Vitamin E have been shown to have a lower risk of developing Alzheimer’s. The interior of butternut squash is also a vibrant colour! That is due to the fact that it contains multiple types of carotenoids (the stuff that gives vegetables their orange colour) and is correlated to increased language, learning and memory.
