Most carrot cakes are full of oil, butter, eggs and regular sour cream. However this version greatly reduces the fat by using pineapple, extra carrots, low-fat yogurt and ripe banana to create the moist texture typical of carrot cake. 

Luteolin is a natural flavonoid compound found in carrots. It is known for its potential health benefits and its role as an antioxidant and anti-inflammatory agent. It may help protect brain cells, reduce neuroinflammation, and potentially play a positive role in conditions like Alzheimer’s disease.
