Aside from caffeine’s brain boosting effects, coffee’s antioxidant richness helps maintain brain health. Chocolate is rich in flavonoids, a class of antioxidant that helps to improve blood flow (and thus brain health) by regulating cholesterol and lowering blood pressure.

Coffee-Rubbed Flank Steak

Coffee-Rubbed Flank Steak Prep time: 2 mins Cook time: 20 mins Serves: 6-8

Ingredients

  • 2-3 lb - flank steak
  • 1/2 cup - fine ground coffee
  • 2 TBSP - cocoa powder
  • 1 TBSP - cayenne pepper
  • 1 TBSP - chili powder
  • 2 TBSP - freshly ground pepper
  • 1 TBSP - sunflower oil
  • Sea salt

Instructions

  1. 1 Combine coffee, cocoa, paprika, chili powder and black pepper in a bowl and mix well. Coat the flank steak with a small amount of sunflower oil, then, use the spread the dry rub marinade all over the steak, and refrigerate for 1-2 hours, or overnight. Do not add salt.
  2. 2 Be sure to bring the steak to room temperature before grilling. Season with sea salt, and place marinated flank steak on BBQ grills for 6 minutes (3 minutes per side). Remove and let rest for at least 15 minutes. Slice against the grain, and serve with an avocado salad and a side of seasonal steamed greens or sweet potato.

Make Ahead:
You can marinate the beef for 2 hours up to 24 hours.
Substitutions:
Extra virgin olive oil can be used in place of sunflower oil
Pairings:
Avocado Cucumber Hazelnut Salad. Sweet Potato Chips with Grainy Mustard Aioli. Serve the coffee-rubbed flank steak with your favourite big red wine, such as Creekside Estate VQA Shiraz.
