Korean Beef & Mushroom Stir Fry with Rice

Ingredients

  • 1 cup (250 mL) basmati rice
  • 1 cup (250 mL) water or stock
  • SAUCE
  • ¾ cup (185 mL) beef or chicken stock
  • ¼ cup (60 mL) hoisin sauce
  • 1½ Tbsp (22.5 mL) low-sodium soy sauce
  • 1½ Tbsp (22.5 mL) rice vinegar
  • 1½ tsp (7.5 mL) sesame oil
  • 4 tsp (20 mL) cornstarch
  • 2 tsp (10 mL) finely chopped garlic
  • 1½ tsp (7.5 mL) finely chopped ginger
  • 1 tsp (5 mL) hot sauce (Sriracha)
  • STIR-FRY
  • 1 lb (500 g) sirloin beef sliced thinly
  • 2 Tbsp (30 mL) all-purpose flour
  • 3 cups (750 mL) thinly sliced mushrooms (any variety)
  • 1½ cups (375 mL) thinly sliced onions
  • 1½ cups (375 mL) thinly sliced carrots
  • ¼ cup (60 mL) cilantro
  • 2 tsp (10 mL) toasted sesame seeds
  • 2 eggs (optional)

Instructions

  1. 1 Preheat the oven to 450°F. Spray a 9-inch (23 cm) square baking dish with vegetable oil.
  2. 2 Bring the rice and water or stock to a boil. Cover and simmer on lowest heat for 10 minutes. Let cool covered for 10 minutes.
  3. 3 For the sauce: Combine the stock, hoisin and soy sauce, vinegar, sesame oil, cornstarch, garlic, ginger and hot sauce. Set aside.
  4. 4 Heat a large skillet sprayed with vegetable oil until very hot. Spread the rice evenly overtop. On medium-high heat, let the rice sit for 10 minutes or until the rice begins to slightly brown and become crisp. Toss rice for another 5 minutes or just until the rice is crisp. Spread over the bottom of the baking dish.
  5. 5 To make the stir-fry: Dust the meat with the flour. Wipe out the skillet, respray and on high heat sear the beef just until cooked to medium. Set aside.
  6. 6 Wipe out the skillet, respray and sauté the mushrooms until no longer wet, about 5 minutes. Add the onions and sauté for 3 minutes; add the carrots and sauté another 3 minutes. Add the sauce and cook just until the sauce thickens, about 2 minutes. Place the meat over the rice, then pour the sauce overtop. Add the cilantro and sesame seeds and bake for 5 minutes.
  7. 7 (Optional) eggs: Prepare 2 sunny-side up eggs in a skillet sprayed with vegetable oil just until barely cooked. Slip the eggs overtop of the beef dish.
