Sweetened Pumpkin Seeds, Peaches & Figs

Sweetened Pumpkin Seeds, Peaches & Figs Prep time: 10 mins Serves: 4

Ingredients

  • 4 - good-sized peaches
  • 6 - black mission figs (can use white if available)
  • 4 TBSP - pumpkin seeds (raw)
  • 2 TSP - honey (use raw or sunflower if possible)
  • 1 - handful of fresh mint

Instructions

  1. 1 Slice peaches to 1/2 inch pieces and figs in quarters. Place fruit in a small dish and sprinkle pumpkin seeds to taste (1 tablespoon per person is a good amount). Drizzle with honey.
  2. 2 Serve with brunch or as dessert.

Notes

Tips:
Try to avoid leaving sliced figs longer than 4 hours, as they lose their shape and bite over time. You might opt to sprinkle a dash of lemon juice over the fruit to retain colour.
Make Ahead:
This dish can be made 4 hours ahead of time and refrigerated until needed.
Substitutions:
You can substitute apricots for peaches, or any fruit of your choice.
