Wild Wonders® Quinoa Salad

Ingredients
- 2 C quinoa
- 4 C water
- ½ C finely diced red onion
- ½ C feta crumbled
- 1/2 C julienned flatleaf parsley
- 1 ½ C Wild Wonders® tomatoes, quartered
- ¼ C extra virgin olive oil
- Kosher salt for seasoning
- Freshly ground black peppercorns for seasoning
Instructions
- 1 Place quinoa in pot with water and bring to a boil. Cover the pot and reduce to low. Cook until all of the water is nearly fully absorbed, approximately 10 minutes. Fluff and transfer quinoa to a serving platter. Sprinkle remaining ingredients evenly over the quinoa in order of ingredients listed and season with salt and pepper to taste.
