Banana and coconut are a match made in heaven! Bonus is, this nutritious-and-delicious chia pudding is super easy to make, free of added sugar and packed with fibre, healthy fats, and protein, too!
This recipe provides a boost pf protein in two ways; one is to use vegan & paleo-friendly protein powder, and the other is to use cottage cheese which gets blended with the coconut milk so you can’t even tell that it’s there. Yet it adds a wonderful creaminess along with loads of protein and vitamins & minerals including B vitamins, calcium, phosphorus, and selenium.
