Beets are known for their earthy flavour and vibrant pops of colour!  Most commonly used are the red variety of beets, however they also come in striped and yellow varieties.

Beets contain nutrients that fight inflammation and enhance oxygenation, improving brain neuroplasticity to guard against age-related cognitive decline. More specifically they are packed with folate, copper, manganese, and nitrates. Interestingly nitrates are linked to enhanced athletic endurance and efficiency related to cardiorespiratory performance. They also improve blood flow to the frontal lobe of the brain, which is associated with decision making and working memory.
