SUPERFOOD // BEETS:
Beets are an anti-inflammatory vegetable that contains natural nitrates, which increases the flow of the blood to the brain, boosting memory and concentration.
This dish is a great introduction to beets or a way to switch it up if you don’t like cooking with red beets. Yellow Beets are sweeter, taste less earthy, and are more mellow than the red Beet. Plus they don’t stain your hands or cutting board as much.
