Blueberry Basil Kale Smoothie

Blueberry Basil Kale Smoothie Prep time: 8 mins Serves: 4

Ingredients

  • 1 cup soy milk
  • 1 1/2 cup pomegranate juice
  • 1/2 cup blueberries
  • 1/2 cup raspberries
  • 1/2 cucumber
  • 1 handful fresh basil
  • 5 whole fresh kale leaves
  • 1 TBSP real maple syrup
  • 3/4 cup ice cubes

Instructions

  1. 1 Peel cucumber and chop in 2-3 inch pieces. Add to blender with rasp- berries, blueberries, ba- sil, kale, and pomegranate juice. Blend until smooth, then add soy milk, maple syrup and ice cubes. Continue to blend until fully combined and smooth.

Notes

Tips: The smoothie will separate after 5 minutes, be sure to blend right before serving to guests. Substitutions: You can use 100% real cranberry juice in place of pomegranate juice. If you do, add 1 extra TBSP maple syrup. You can use 1% cow’s milk in place of soy or almond milk.
