Choline in particular is a nutrient used to maintain the structure of cell membranes. Eggs are also high in folate. Folic acid, is important for the nervous system, affecting mood and cognitive function, especially in older people. Researchers have found that folate deficiency in older adults increases the risk of Alzheimer’s disease and dementia.
