Grilled Romaine with Turmeric

Grilled Romaine with Turmeric Prep time: 5 mins Cook time: 3 mins Serves: 6

Ingredients

  • 1 - head escarole or Boston lettuce
  • 3 TBSP - turmeric
  • 3 TBSP - sunflower oil
  • Sea salt and freshly ground black pepper

Instructions

  1. 1 Wash and dry lettuce greens, then place on a plate and season with salt and pepper. Sprinkle 1½ tablespoons of turmeric over escarole, but do not mix (or greens will turn a bright yellow colour).
  2. 2 Place the escarole on a lightly oiled grill for 3 minutes, turning once. Remove escarole when edges are darkened and crispy. Sprinkle with remaining turmeric and serve.

Notes

Tips:
Be sure your grill is very hot and well-oiled before placing lettuce down. Only grill until the edges start to brown, then remove. To achieve the best grill marks, be sure your lettuce greens are very dry before grilling
Substitutions:
Boston and Romaine lettuce can also be flash grilled.

Baked citrus tilapia with hazelnuts en papillote.
