Sweet Baby Kale Salad

Sweet Baby Kale Salad Prep time: 15 mins Serves: 2

Ingredients

  • 1 cup - fresh baby kale
  • 2 - fuji apples
  • 1/2 cup - dried apricots
  • 1/4 cup - roasted pine nuts
  • 1/2 - lemon juice
  • 2 TBSP - real maple syrup
  • 1/2 - extra virgin olive oil
  • 1 TSP - dijon mustard
  • Sea salt
  • Freshly ground pepper

Instructions

  1. 1 Make salad dressing: combine lemon juice, maple syrup, Dijon, olive oil, salt and pepper. Dress kale leaves with 1/2 the salad dressing and set aside for 15 minutes – this will allow kale leaves to soften and de-biter slightly. If using large whole kale leaves, let stand dressed for 30 minutes.
  2. 2 Toast pine nuts for 5 minutes until golden brown. Peel, core and finely chop apples, and dice apricots. Combine all ingredients and serve.

Notes

Tips:
Kale will sweeten with a little time in a light dressing and maintain their crispness – watch closely to ensure kale leaves do not become too soft.
Make Ahead:
Salad dressing can be made up to 1 day in advance.
Substitutions:
Honey works in place of maple syrup.
